Ingredients

Sauce:

  • 100g Sainsbury's smooth peanut butter

  • 1 garlic clove, mashed

  • 30ml sesame oil

  • 45ml Sainsbury's Soy Sauce

  • 20g Sainsbury's dark brown sugar

  • 15ml white vinegar (rice vinegar or regular)

  • 100ml Sainsbury's light coconut milk

  • 30ml water

  • Optional: 1 chopped red chili pepper

Salad:

  • 300g roasted chicken, cut into strips

  • 250g cabbage, very finely chopped or shredded

  • 2 carrots, very finely chopped or shredded

  • 2 spring onions, diagonally cut

  • Garnish (Optional)

  • Some peanuts, finely chopped

  • Fresh coriander, finely chopped

Chicken

Method:

  • In a blender or with a hand whisk, mix the sauce ingredients and stir very well until smooth.
  • In a large serving bowl mix all the salad ingredients, season with the sauce and garnish with the peanuts and the fresh coriander!
