100g Sainsbury's smooth peanut butter
1 garlic clove, mashed
30ml sesame oil
45ml Sainsbury's Soy Sauce
20g Sainsbury's dark brown sugar
15ml white vinegar (rice vinegar or regular)
100ml Sainsbury's light coconut milk
Optional: 1 chopped red chili pepper
300g roasted chicken, cut into strips
250g cabbage, very finely chopped or shredded
2 carrots, very finely chopped or shredded
2 spring onions, diagonally cut
Some peanuts, finely chopped
Fresh coriander, finely chopped
- In a blender or with a hand whisk, mix the sauce ingredients and stir very well until smooth.
- In a large serving bowl mix all the salad ingredients, season with the sauce and garnish with the peanuts and the fresh coriander!
